After analyzing young barley grass leaves, the Resource Research Association (Office of Science and Technology) Japan, reported young barley leaves to be rich in vitamins (including beta-carotene, B-vitamins, and Vitamin C); minerals (including potassium, calcium, iron phosphorous, and magnesium); chlorophyll; essential and non-essential amino acids; and many live enzymes including the anti-oxidant enzyme, Superoxide Dismutase (SOD).
